Food for thought

Recently, having worked with a client who was interested in getting their Home Industry store more known and 'drive a bit of foot traffic' back to the store. Its a great store in Tygervalley Center in Cape Town and coincidentally is called Just Delicious;)They asked me how the other scratch card promotions I have done have played a part in sales?

"Well Yes!, Of course they have" was the answer.

Scratch cards can help in different industries to increase sales, create a point of contact, help drive return business back to your store and then there is of course more...

ha ha as the sales technique goes!!

Easy cooking - Warm Wraps for Two

It is a freezing day in Cape Town. The sea is being publicized everywhere as being unusually huge! And it is! The ocean is crashing right over the banners on the Sea Point promenade. Sonice to be cozy and indoors.

The wind! Wow, scary loud and strong. The whole night and day the wind has been slamming into the windows and with every slam I am hoping that they don't shatter!

Nothing really in the fridge but left overs. Lunch must be warm and preferably on the couch wrapped in a fluffy blanket! Cannot face going out to buy anything. so what ever I have will have to be perfect for the two of us.

4 x wraps (they great cause you can keep them in the freezer and just heat in a pan)
1/2 pack cut mushrooms and 1 x onions
1 x tomato
1 x ready tzatziki

1 x tin cream corn

Heat the wraps, 2 each - warm lunch for two
Fry up the mushrooms and onions (add mixed herbs, salt, pepper, paprika
Heat tinned corn in microwave.
Cut tomato

Keep everything separate and place in bowls, to mix and match as you like:)

Easy cooking for two people! The wraps are nice and warm mixed with variety of fillings.

Chicken Curry with Coconut Rice

My friend Duncan and his girlfriend Marina are always coming up with the most fantastic ad innovative recipes out!

Just on an ordinary night we will research on line to find some great recipe to whip up!

This one he found recently on the tastic website and said that it was so quick and easy! Thought to share!

Chicken Curry with Coconut Rice
Serves 4

Ingredients

250 ml uncooked Tastic Parboiled Rice
60 ml sunflower oil
1 onion, sliced
5 ml grated fresh ginger
OR 2 ml ground ginger
2 cloves garlic, crushed
2 green chillies, chopped
15 ml medium curry powder
8 chicken pieces
rind of 1 lemon
25 ml lemon juice OR vinegar
5 ml sugar
salt and freshly ground black pepper to taste
400 ml chicken stock
50 ml coconut
To serve: fresh parsley

Method

1. Heat the oil in a heavy-based saucepan, add the onion, ginger, garlic and chillies and sauté over low heat for 10 minutes or until onion is translucent. Add the curry powder and fry for 1 minute.
2. Add the chicken and cook for a further 5 minutes, mix in the lemon rind, lemon juice or vinegar, sugar, salt and pepper.
3. Stir in the chicken stock, cover with lid and simmer for 40 minutes. Add more water if necessary.
4. Meanwhile, cook the rice according to the instructions on the pack. Heat a heavy-based saucepan.
5. Add coconut and stir over moderate heat until golden brown in colour. Stir into rice and lightly mix through.
6. Spoon chicken curry on top of the rice. Garnish with parsley and serve.

Tip

Should you prefer a thicker gravy, thicken gravy with a paste of cake flour and water.

Neiman-Marcus - have you heard?

A little background : Neiman-Marcus, if you don't know already, Is a VERY expensive shop; e.g, they sell a typical $8.00 T-shirt for $50.00.

THIS IS A TRUE STORY

My daughter and I had just finished lunch at a Neiman-Marcus Cafe in Dallas , Because both of us are such biscuit lovers, we decided to try the 'Neiman-Marcus cookie'. It was so excellent that I asked if they would give me the recipe. The waitress said with a small frown, 'I'm afraid not, but you can BUY the recipe. ' I asked how much, and she responded; 'Only two fifty - it's a great deal!'

I agreed to that, and told her to add it to my bill.

Thirty days later, I got my VISA statement, and the Neiman-Marcus Charge was $285.00. I looked at it again, and I remembered I had only spent $9.95 for two sandwiches and about $20.00 for a scarf.

At the bottom of the statement, it said, 'Cookie Recipe - $250.00'. That was outrageous!

I called Neiman's Accounting Department and told them the waitress Had said it was 'two fifty', which clearly does not mean ' Two hundred And fifty dollars' by any reasonable interpretation of the phrase. Neiman-Marcus refused to budge. They would not refund my money Because, according to them; 'What the waitress told you is not our Problem.' and as you have already seen the recipe we absolutely will not refund your Money.'

I explained to the Accounting Department lady the criminal statutes Which govern fraud in the state of Texas . I threatened to report them To the Better Business Bureau and the Texas Attorney General's office. I was basically told: Do what you want. Don't bother thinking of how you can get even, and don't bother trying to get any of your money back'

I said, OK, you've got my $250, and now I'm going to have $250 worth of fun.' I told her that I was going to see to it that every cookie lover in the world with an e-mail account gets a $250 cookie recipe from Neiman-Marcus..... For Free.

She replied, 'I wish you wouldn't do that.'

I said, 'Well, perhaps you should have thought of that before you RIPPED ME OFF!' and slammed down the phone.

So here it is!

Please pass it on to everyone you can possibly think of. I paid $250 for this, and I don't want Neiman-Marcus to EVER make another penny from this recipe!


NEIMAN-MARCUS COOKIES (Recipe may be halved)

2 (500 ml) cups butter

24 oz. (680 g) chocolate chips

4 (1000 ml) cups flour

2 (500 ml) cups brown sugar

2 tsp. (10 ml) (Bicarb) soda

1 tsp. (5 ml) salt

2 (500 ml) cups sugar

18 oz (500 g) Hershey Bar (grated).
(Cadbury chocolate for Australians & South Africans)

5 (1250 ml) cups blended oatmeal

4 eggs

2 tsp. (10 ml) baking powder

2 tsp. (10 ml) vanilla

3 cups (375 ml) chopped nuts ( optional )

....................


Measure oatmeal, and blend in a blender to a fine powder.

Cream the butter and both sugars.

Add eggs and vanilla, mix together with flour, oatmeal,

Salt, baking powder, and Bicarb (soda).

Add chocolate chips, Hershey Bar, and nuts.

Roll into balls, and place two inches apart on a cookie sheet.

Bake for 10 minutes at (180 °C ) 375 degrees.

Pesach - supper wish list

Saturday 19th April is First night Pesach.

I just love this time of year. Any excuse is a good one for all the family to gather together over hot Kinadilach soup (mmmmmmm). Food is just oh so important, it's what brings us together, makes us feel warm and put smiles on our faces.

During each of the Hag's (High holidays) its always a good time to reflect back on ones self and the whole meaning of life etc etc that people ponder over.

If you are Jewish or even if you not this is my wish list for the dinners table this year:

Chopped Herring
Matzot

Crunchies with chocolate

I am still baking for Just Delicious, Tygervalley shopping center.

I actually like keeping busy and baking. Its nice to let your mind wonder and get totally absorbed in mixing up the ingredients.

Its a process just like ones thought pattern.
Slowly you unravel your mind, and dissect thought by thought while pouring out the ingredients. Then as you mix them in... 1st the sugar and coconut and flour and oats, I start to come to conclusions about some of the jumbled ideas. Then, boiling up the butter and syrup, boiling away all those frustrations that have happened. Now just left with a sweet buttery mixture... one teaspoon bicarb and butter begins to froth up. Swirling around and around, rich, thick and golden. The froth rises and I know that all that frustration has melted and it's time to pour the pure decadent whirl into the dry ingredients.

I always think that I have not made enough syrup to completely saturate the flour. But it's always just enough.

Then one hand on the wooden spoon and another changing the channel, I smooth out all the lumps and bumps. The mixture must be totally mixed before spreading onto the tray.

Pat the crunchy mixture down into the tray and bake. 170 degrees Celsius, 15min.

Take out and cut immediately before it sets, while still hot.

Chocolate Icing:

Soo easy and simply delicious.

Icing sugar, sifted till light as a fairy. Mix in a table spoon butter, 1 tablespoon coco and 2table spoons water. Make it thick chocolate add more icing...
and th most important ingredient is the vanilla essence!! It makes the icing tast less like sugar and turns the chocolate into a lighter colour.

Chocolate crunchies and a content mind. Best part is now you get to share with friends and loved ones and watch the enjoy!
