Crunchies with chocolate
I am still baking for Just Delicious, Tygervalley shopping center.
I actually like keeping busy and baking. Its nice to let your mind wonder and get totally absorbed in mixing up the ingredients.
Its a process just like ones thought pattern.
Slowly you unravel your mind, and dissect thought by thought while pouring out the ingredients. Then as you mix them in... 1st the sugar and coconut and flour and oats, I start to come to conclusions about some of the jumbled ideas. Then, boiling up the butter and syrup, boiling away all those frustrations that have happened. Now just left with a sweet buttery mixture... one teaspoon bicarb and butter begins to froth up. Swirling around and around, rich, thick and golden. The froth rises and I know that all that frustration has melted and it's time to pour the pure decadent whirl into the dry ingredients.
I always think that I have not made enough syrup to completely saturate the flour. But it's always just enough.
Then one hand on the wooden spoon and another changing the channel, I smooth out all the lumps and bumps. The mixture must be totally mixed before spreading onto the tray.
Pat the crunchy mixture down into the tray and bake. 170 degrees Celsius, 15min.
Take out and cut immediately before it sets, while still hot.
Chocolate Icing:
Soo easy and simply delicious.
Icing sugar, sifted till light as a fairy. Mix in a table spoon butter, 1 tablespoon coco and 2table spoons water. Make it thick chocolate add more icing...
and th most important ingredient is the vanilla essence!! It makes the icing tast less like sugar and turns the chocolate into a lighter colour.
Chocolate crunchies and a content mind. Best part is now you get to share with friends and loved ones and watch the enjoy!
